Energy Bites- No Baking Required!
What You Need
1 cup of raw almonds
2 Tbsp of maple syrup
2 Tbsp of tahini
2 Tbsp of raw cacao powder
1 tbsp chia seeds
2 Tbsp coconut shredds and about 1 cup, extra for rolling
2 tbsp of hemp seeds
2 Tbsp of oats (optional)
1 scoop of plant protein powder (optional) We use Sunwarrior Vanilla Warrior Blend
In a food processor fitted with a metal blade, pulse the raw almonds until they are broken into small pieces
Add dates and blend until the dates are fully mixed
Now add the remaining ingredients and pulse until blended all together, scraping down the sides of the food processor as needed.
You will know that you have the correct consistency when the dough sticks together in a ball without crumbling
Now with your hands roll them into bite size balls
Pour the extra coconut shredds onto a plate and roll the finished energy bite into the coconut, coating the outside
Store in a glass, air tight, container in the fridge for a weeks time or long term storage in the freezer
They can safely be enjoyed covered and unrefidgerated for up to a week, perfect for travel.
My personal favourite is enjoying them straight out of the freezer
If the dough is too dry add another tablespoon of maple syrup, water, a date or Tahini. If the dough is too wet add another tablespoon of a dry ingredient such as coconut shredds, oats, or chia seeds.
If you don't like a certain ingredient, leave it out! This recipe is totally interchangable with your own favourite superfoods.
Don't get stuck on following the recipe to a T, that is the beauty of energy bites, it's pretty much impossible to ruin the them.
Want it to be gluten free, make sure to buy certified gluten free oats or just leave them out.
Don't like coconut, roll them in hemp or sesame seeds or nothing at all
Try adding a couple tbsp of goji berries, cranberries or any other dried fruit
Ramp up the power by adding a tablespoon of maca powder
Need a caffeine free option, replace the cacao with carob powder
Need a nut free option, replace the almonds with sunflower seeds
Don't like Tahini, replace it with another nut or seed butter or coconut butter
